Our olive grove consist of 800 plants
and the main varieties are Leccino, Frantoio, Moraiolo and Tondino. The olive tree is since ages an immemorial part of the Umbrian history and culture.
Olives that have reached the right degree of ripeness are harvested from the tree by hand, to ensure their integrity. Within a few hours the olives are taken to the mill, separated from impurities and leaves and washed.
