Red wine making
At Podere Barbi we use the winemaking traditions of the Orvieto region but modern technology is essential to enhance them. Our best wine production feature lies in the choice from varieties which are 95% indigenous. Sangiovese is the predominant source, followed gradually by Montepulciano, Ciliegiolo and Canaiolo.
From the very beginning we believed in all of these being the essence of our production, which disassociates us from the consistent use of international sources.
But only passion makes great wine from great grapes.
Our grapes are handpicked - the only way to select the best fruit - and are pressed within an hour thanks to the small distance from the vineyards to our cellars
The stalks are removed from the grapes which are pressed and pumped peristaltically into open vats for fermentation. The lees are immersed several times a day by hand. A constant control of the temperature is key to get the best out of the diverse character of the grapes.
We only partially mature our red wines in small oak barrels, housed in underground caves where the malolactic process takes place. We believe that other red wines do not need wood and are therefore stored in stainless steel.
Naturally our red wines are peacefully refined in bottles for a few months.
